SAŽETAK / ABSTRACT:

Amphibians and molluscs are emerging as an important alternative source of animal proteins In certain countries, they are frequently consumed and regarded as culinary delicacies. Frogs and snails are, with a few exceptions, non-toxic, highly nutritious, and easy to cultivate, making them an excellent alternative protein source. Frog meat is rich in amino acids and has a very favourable amino acid composition. Frog farming requires minimal resources (food, water, and space) rendering it cost-effective and accessible, particularly for low-income populations. Snails are nutritionally rich food, and they are particularly rich in minerals. Proper preparation before consumption, including cleaning, washing, and heat treatment, is crucial for ensuring consumer safety, given the potential presence of various pathogenic microorganisms. In conclusion, establishing standardized quality criteria and harmonizing regulations across countries would facilitate the trade of frog and snail meat, ensuring product quality and safety, thereby enhancing consumer satisfaction. This could promote market growth and increase profitability for producers and sellers, while consumers would benefit from better-quality and safer products
