ABSTRACT / САЖЕТАК:
Fructans are a group of complex carbohydrates that exert microbiota-stimulating and immunomodulating effects. The biological activity of fructans depends on their molecular weights and linkage type. Fructooligosaccharides are short-chain fructans with a degree of polymerization from 3 to 10. While inulin-type, β-(2,1) fructooligosaccharides are well studied and commercially exploited, the potential of levan-type, β-(2,6) fructooligosaccharides is still intensively studied. This work aimed to optimize conditions for preparing fructooligosaccharides by mild acid treatment using polysaccharide levan obtained by fermentation with B. licheniformis NS032. The optimum time for hydrolysis at 80 °C was 15 minutes. Based on MALDI analysis, it was shown that the obtained preparation contained oligosaccharides with degree of polymerization in the range 3-7. Also, the biological activity of prepared fructooligosaccharides was retained.
