САЖЕТАК / ABSTRACT:
Red wine is one of the most popular alcoholic beverages. Its popularity is also due to the fact that its components can have beneficial effects on human health when consumed in moderate amounts. Throughout history, wine production technology has advanced to achieve a final product of the highest possible quality. The aim of this study was to assess the impact of melatonin addition in the vinification process on the total phenolic content of Muscat Hamburg red wine. Additionally, an elemental analysis of the wines was conducted. The results indicated a significant increase in total phenolic content in the melatonin-treated wine. Both melatonin-treated and untreated wines were found to be good sources of essential elements for humans and were deemed safe for consumption.
