ABSTRACT / SAŽETAK:

Industrija mesa sve više propagira trend organske proizvodnje, bez upotrebe hemijskih konzervanasa, pri čemu neki konzervansi ispoljavaju kancerogene i toksične osobine. Ovaj vid proizvodnje I prerade mesa u prvi plan ističe upotrebu etarskih ulja zbog antibakterijskih i antioksidativnih osobina ali i mogućnosti da se koriste kao zamena za sintetičke additive. Primena etarskih ulja je izuzetna I može da utiče na smanjenje bolesti prenosivih hranom, da spreči I odloži lipidnu oksidaciju kao I da produži održivost namirnica. Etarsko ulje origana jedno je od najčešće korišćenih etarskih ulja za primenu u mesnoj industriji.

Cilj istraživanja bio je ispitivanje uticaja pakovanja u modifikovanoj atmosferi i antimikrobnog efekta različitih koncentracija etarskog ulja origana (0,1%, 0,3% i 0,6%), na Salmonella spp. i mikrobiološki status sjeničke ovčije stelje, kao i ispitivanje prihvatljivosti sjeničke ovčije stelje.
