ABSTRACT / САЖЕТАК:
When the generation of reactive oxygen species is higher than activity of antioxidants it results cell damage. Antioxidants from natural sources could prevent it problems. In this study was evaluated biological activity of sweet cherry wines, and its ability to prevent oxidative stress. Specific phenolic compounds were quantified and total phenolic content. Antiradical activity was estimated by DPPH radical, while antioxidant activity by FRAP method. Oxidative stress parameters, malondialdehyde (MDA), superoxide dismutase (SOD), glutathione peroxidase (GPx), and catalase (CAT) were monitored. Analzed wines were rich source of phenolic compounds responsible for it ability to prevent oxidative stress.
