САЖЕТАК:

Hladno presovana ulja imaju visoku nutritivnu i tržišnu vrednost. Za razliku od ulja dobijenih ekstrakcijom i rafinacijom, proizvodnja hladno presovanih ulja je ekološki pogodnija, jednostavnija, a ulja zadržavaju važne nutrijente. Tikva i orah se uzgajaju kao sporedne kulture na seoskim domaćinstvima u Centralnoj i Zapadnoj Srbiji. Njihovi plodovi su potencijalne sirovine za dobijanje visokokvalitetnog jestivog ulja. Cilj rada je bio analiza osobina hladno presovanog ulja tikve i oraha, kao osnova za dalji istraživački rad na ispitivanju potencijala genotipova tikve i oraha gajenih u Centralnoj i Zapadnoj Srbiji za proizvodnju ulja.
