UTICAJ LIPOLITIČKIH PROMENA U SILAŽI NA SADRŽAJ POLINEZASIĆENIH MASNIH KISELINA U MLEČNOJ MASTI PREŽIVARA

САЖЕТАК:

U radu je dat pregled domaćih i stranih istraživanja uticaja lipolitičkih promena u silaži na količinu i sastav mlečne masti. U toku pripreme materijala za siliranje (provenjavanje) dolazi do gubitaka zbog lipolize i oksidacije masnih kiselina. Za vreme fermentacije silirane mase i pri korišćenju nekih sojeva bakterija mlečne kiseline kao inokulanata (Lactobacillus plantarum AKU 1009a), dolazi do biohidrogenizacije nekih PUFA i povećanja sadržaja konjugovanih masnih kiselina u samoj silaži. Na osnovu pregleda većeg broja ogleda najpovoljniji uticaj se može pripisati silažama leptirnjača i trava, u poređenju sa silažama cele biljke kukuruza. Na prvom mestu je, svakako, silaža crvene deteline, zbog delimične redukcije lipolize polifenol-oksidazom. Suprotno tome, pri korišćenju kukuruzne silaže, dolazi do biohidrogenizacije linolne kiseline u trans-10, cis-12 CLA, koji je vrlo snažan inhibitor sinteze mlečne masti.
