Kombucha tea is a fermented beverage known for its health benefits. This study investigated the properties of kombucha tea and biofilms enhanced with homopolysaccharides, levan and pullulan. The biofilms showed high solubility (98.59% to 99.74%) and thicknesses between 10 µm and 40 µm. They exhibited impressive antioxidant capacity, reaching 96%, with no significant differences between the two polysaccharide types. The biofilms also demonstrated strong antimicrobial activity against Staphylococcus aureus and Candida albicans, indicating potential for food preservation and therapeutic use.
