САЖЕТАК:

Stres se neizbežno javlja u modernom govedarstvu, u lancu proizvodnje goveđeg mesa, od farme do klanice. Efekti stresa na ponašanje, fiziološki status i kvalitet mesa su ispitivani od strane većeg broja autora.  Mehanizam efekata stresa na fiziološke i biohemijske promene i posledični efekti na atribute kvaliteta mesa su nedovoljno poznati. Ovaj pregled prikazuje primarne faktore stresa koji utiču na dobrobit životinja i uzrokuju biohemijske promene tokom ranog postmortalnog perioda, što umanjuje kvalitet trupova i njihov nutritivni kvalitet. Da bi se dobilo meso visokog kvaliteta, potrebne su dalje studije na razotkrivanju kompleksnih, gore pomenutih, mehanizama.
