UTICAJ MASTI OBROKA NA SADRŽAJ ESENCIJALNIH MASNIH KISELINA U MLEČNOJ MASTI PREŽIVARA

САЖЕТАК:

U radu je dat pregled istraživanja uticaja ishrane obrocima i hranivima bogatim lipidima, na proizvodnju i hemijski sastav mleka, kao i na sadržaj polinezasićenih masnih kiselina (PUFA) u mlečnoj masti preživara. U brojnim ogledima dokazano je da mnogi genetički i negenetički faktori dovode do varijacija u količini masti i sadržaju masnih kiselina u mleku, ali najveću ulogu ima ishrana životinja. Pored konzumiranja zelene biljne mase (na paši ili u staji) drugi najvažniji način za povećanje sadržaja PUFA je korišćenje nekih uljarica. Među ispitivanim vrstama (soja, suncokret, lan, pamuk, kikiriki), najbolje rezultate je dala termički obrađena soja, koja ujedno obezbeđuje i veći sadržaj nerazgradivih proteina.
